1 teaspoon minced garlic

1 tablespoon rice vinegar
1/2 tablespoon hoisin sauce
1/2 tablespoon honey
1/2 tablespoon sriracha sauce
1 teaspoon sesame oil

Dice the yellow onion, carrots, and red bell pepper into small, roughly equal-sized pieces. Mince the garlic and ginger.

In a small bowl, whisk together the low sodium soy sauce, hoisin sauce, rice vinegar, honey, sriracha sauce, and sesame oil. Set aside.

Turn a burner on medium heat. In a large skillet or wok, add the diced onion, carrots, and red bell pepper to the skillet with the cooked turkey.

Cook for about 5-7 minutes.

Add the minced garlic and ginger to the skillet and cook for another minute, until fragrant. Be careful not to burn the garlic. Once cooked, remove from the skillet.

Add your ground turkey to the skillet or wok.

Cook the ground turkey (or beef/chicken) until browned and fully cooked, breaking it up with a spoon as it cooks. Drain off any excess liquid.

Add back the vegetables and mix everything together. Add a pinch of salt and black pepper.

Let it simmer on low for about 10-15 minutes. Once it’s done simmering, remove it from the skillet or wok.

Gently separate the leaves from the butter lettuce. Wash and dry them thoroughly. You want them intact and able to hold the filling.

Spoon a generous amount of the turkey mixture into each lettuce leaf.
