1

Cut pork into large pieces, removing meat from around the bone.

2

Roughly chop one whole onion and peel one whole head of garlic, using at least 8 whole cloves.

3

In a large pot, add meat, some skin, and bone for flavor.

4

Add the chopped onion and garlic to the pot.

5

Pour in 3 cups of water, 1/2 cup of orange juice, and a bottle of Mexican cola.

6

Sprinkle on 1 teaspoon of dried oregano, plus 2 whole bay leaves. Season with salt and pepper to taste.

7

On the stovetop, bring the mixture to a boil.

8

Once boiling, reduce heat to a low simmer and cook covered for 2 hours, then uncovered for about another hour until meat separates easily with a fork.

9

Rotate the meat a few times during simmering for even cooking.

10

After 3 hours, check for tenderness and let the meat sit in the broth for 15 minutes before serving.
