Grass-fed beef is leaner and more nutritious; ribeye steak is more budget-friendly.
Preheat the grill on high heat and the oven to 190°C.
Generously season the tomahawk steak with salt on both sides.
Add cracked black pepper to both sides of the steak.
Drizzle olive oil on both sides of the steak and rub it in.
Sear the steak on the grill for about 3 to 4 minutes on each side.
After searing, place the steak in a tray lined with baking paper.
Insert a wireless thermometer into the thickest part of the steak and set it to monitor for medium rare (60°C).
Place the steak in the oven set to 190°C.
Melt garlic butter in a small saucepan while the steak cooks in the oven.
Wait for the internal temperature to reach 60°C, which will trigger an alarm on the thermometer.
Remove the steak from the oven and let it rest for about 5 minutes before slicing.
Slice the steak off the bone with a sharp knife, ensuring to cut across the grain.
Serve the steak with skin-on chips and melted garlic butter.
