1/2 white onion

2 tablespoons olive oil
2 teaspoons butter
fresh thyme
1/2 teaspoon all-purpose seasoning
1 teaspoon jerk seasoning
black pepper

Wash chicken thighs with lime and water, then rinse and pat dry.

Leave a little fat on the chicken for flavor.

Add 1/4 cup of jerk marinade to the chicken and massage it in.

Chop 1/4 of a red bell pepper, 1/4 of a green bell pepper, and 1/4 of a yellow bell pepper.

Cut 3/4 of a green cabbage into bite-sized pieces, avoiding the stem.

Cut half of a medium carrot into strips and julienne them.

Chop half of a white onion.

Mash and chop 3 garlic cloves.

Add the remaining jerk marinade to the bottom of the air fryer with 1/4 cup of water.

Place the chicken in the air fryer and cook at 400°F for about 20 minutes, flipping halfway through.

In a skillet, melt 2 tablespoons of olive oil and 2 teaspoons of butter.

Add the chopped onion to the skillet and sauté until translucent, about 1 minute.

Add the carrot strips to the skillet and stir.

Add the mashed garlic and chopped cabbage to the skillet and stir.

Add fresh thyme leaves to the skillet, removing them from the stems.

Add the bell peppers and scotch bonnet pepper to the skillet last to avoid overcooking.

Season the vegetables with 1/2 teaspoon of black pepper, 1 teaspoon of jerk seasoning, and 2 1/2 teaspoons of all-purpose seasoning.

Stir everything together and turn off the heat to let it cool slightly.

After about 50 minutes, remove the chicken from the air fryer and cut it into strips.

Add the chicken strips to the cooked vegetables and toss everything together.
