While traditionally made with cream cheese, variations exist that incorporate local cheeses, making it a versatile treat enjoyed by many.

Sift the all-purpose flour into a bowl.
Add sugar and salt to the sifted flour and mix well.
Melt the lard in a heated skillet and then pour it into the flour mixture, mixing with a wooden spoon.
Gradually add hot water to the mixture, mixing until it forms a dough.
Knead the dough gently on a countertop until it is smooth, then cover and let it rest for 10 minutes.
Prepare the Api by boiling water in two pots, adding cinnamon and cloves to each pot.
Dissolve the Api morado and Api blanco in cold water, then add to their respective pots.
Add orange peel and sugar to taste to each pot and let them cook for 15 minutes, stirring occasionally.
Grate the cheese and set it aside.
Divide the rested dough into balls of desired size, yielding about 12 balls.
Roll out each ball of dough into a thin circle.
Place a generous amount of grated cheese in the center of each circle.
Moisten the edges of the dough with water, fold over to seal, and press the edges with a fork to secure.
Heat oil in a skillet for frying.
Fry the pasteles until golden brown, about 3-4 minutes per side, adding oil on top as needed.
Remove the pasteles from the oil and drain on paper towels.
Serve warm with a sprinkle of powdered sugar or plain, alongside Api.
