Boil potatoes until tender, then cool and peel (optional, as the creator cooks raw potatoes directly).
Cut potatoes into bite-sized pieces (if boiled).
Heat a little oil in a skillet over medium-high heat.
Add the raw potato pieces to the skillet and cook for about a minute without adding water.
Cover the skillet with a lid to allow the potatoes to cook in their own moisture and crisp on the edges.
Every 5 minutes, open the lid, stir the potatoes, and cover again to ensure even cooking and crisping.
Once the potatoes are cooked to preference, add salt and turmeric, toss well, and cook for an additional minute.
Set the potatoes aside to prepare the spiced oil (Turka).
In the same skillet, add more oil over medium-high heat.
Once the oil is hot, add mustard seeds and cumin seeds, mixing them in.
Let the mustard seeds pop and the cumin seeds darken and become fragrant.
Reduce the heat to medium-low and add julienned ginger, garlic, green chili, and a pinch of salt to the pan.
Cook the mixture until the garlic is evenly golden, being careful not to burn it by keeping the heat low.
Combine the spiced oil mixture with the crispy potatoes, add vinegar, and cook for about a minute to let the vinegar cook out a little.
Taste and adjust seasoning, adding more salt or chili flakes if desired.
