Sift the flour into a bowl.

Add a pinch of salt, 1 tablespoon of sugar, 2 eggs, 200 mL of milk, 75 mL of water, and 30 g of melted butter to the bowl.

Whisk together until it becomes a smooth batter.

Place the frying pan over medium to high heat and allow it to warm through.

Add a little bit of melted butter to the pan.

Pour 3/4 of a ladle of the batter into the pan, moving it around to spread evenly.

Let it brown underneath for about 30 seconds, ensuring it doesn't stick to the pan.

Give the pancake a little shake to release it from the bottom and flip it over.

Cook for a few seconds more and then remove it, placing the pancake flat on a serving plate.

Repeat the process with the remaining batter.

For garnish, squeeze a little lemon and sprinkle caster sugar over each pancake before folding in half and then half again to make a fan shape, or roll them up.
