1/2 pint jar home-canned tuna

1 stalk celery
1/4 red onion
1/2 jalapeno

cayenne pepper

thin slices of Tillamook Colby jack cheese

In a mixing bowl, combine 1 egg and 1/3 cup grated mozzarella cheese.

Spread the mixture into a waffle maker to form the first chaffle.

Close the waffle maker and cook until the chaffle is done and crispy.

In a separate bowl, mix together the home-canned tuna, 2 tablespoons red bell pepper, 1 stalk celery, 1/4 red onion, 1/2 jalapeno, 1 tablespoon cilantro, cayenne pepper, and red pepper flakes.

Once the first chaffle is cooked, layer thin slices of Tillamook Colby jack cheese on top.

Add a fair amount of the tuna mixture on top of the cheese.

Top the tuna with more thin slices of cheese to cover it.

Place the second chaffle on top and close the waffle maker to melt the cheese and heat through.
