Chop one stalk of celery into small pieces.

Open and strain two cans of yellowfin tuna, noting it's about 3/4 of a pound.

Chop about 2 tablespoons of bread and butter pickles finely.

Add a pinch of salt and 1/4 teaspoon of celery salt to the mixture.

Add a couple of pinches of cracked fennel seed and black pepper to taste.

Microplane half a clove of garlic into the mixture.

Chop equal parts of parsley and celery leaves, adding about 2 tablespoons to the mixture.

Add 1 tablespoon of Dijon mustard and mix in 1/4 cup plus 2 tablespoons of mayonnaise.

Mix all ingredients together until well combined, ensuring the consistency is not too wet.

Taste for seasoning and adjust with more salt, fennel seed, and black pepper as needed.

Add a splash of pickled pepper vinegar for extra flavor and mix again.
