1

Welcome to Cooking with Ash, today we're making Guyanese duff, also known as dumplings.

2

Start with 2 cups of all-purpose flour, add 1 tablespoon of baking powder, and 1 teaspoon of salt, then mix well.

3

Add 2 tablespoons of butter to the flour mixture and mix until well incorporated.

4

Gradually add 1 cup of lukewarm water to form a dough, noting that you might need more or less water depending on your flour and climate.

5

Knead the dough for about 2 minutes until smooth and not sticky, adding more flour if necessary.

6

Cover the dough with a damp paper towel and a tea towel, and let it rest for 10-15 minutes.

7

Shape the rested dough into long thick pieces, rolling them out as desired.

8

Bring a pot of water to a boil, then add the shaped dough pieces one at a time.

9

Boil the dumplings for about 7-8 minutes until they float to the top, indicating they are ready.

10

Strain the dumplings and set aside.

11

In a pan, add 2 tablespoons of butter (or oil) and heat until melted.

12

Add 1/2 chopped onion, 1/4 cup scallions, 1/4 cup celery, and 1 tomato to the pan and sauté until softened.

13

Season the sautéed mixture with complete seasoning and add 1/2 cup of coconut milk, allowing it to simmer.

14

Add the strained dumplings to the pan and toss them in the sauce until well coated and heated through.

15

Garnish with additional cilantro and scallions before serving.
