Hamentashen are traditional pastries enjoyed during Purim, a Jewish holiday commemorating the saving of the Jewish people from Haman's plot. These triangular cookies symbolize Haman's ears and are filled with sweet fillings, often fruit preserves or poppy seeds. The custom of baking Hamentashen has spread beyond Jewish communities, with variations appearing in bakeries worldwide, especially around the Purim season.

Cream together butter and sugar in a KitchenAid mixer for about a minute.
Add lemon zest and mix well, scraping down the sides of the bowl.
Add the egg and mix until combined.
In a separate bowl, whisk together flour, baking powder, and salt.
Incorporate the dry ingredients into the wet ingredients, adding vanilla extract.
Work the dough with hands, ensuring it is not too sticky, then shape into a flat disc.
Refrigerate the dough for about 30 to 45 minutes.
Roll out the dough on a floured surface to about 1/8 inch thickness.
Cut out circles using a biscuit or cookie cutter.
Place about half a teaspoon of fruit preserves in the center of each circle.
Pinch together the three corners to form a triangle shape.
Bake in a 375°F oven for 10 minutes, watching closely to avoid over-browning.
