Skúffukaka, or 'tray cake', is a beloved Icelandic dessert traditionally enjoyed at gatherings and celebrations. Its rich chocolate flavor and simple preparation make it a favorite among families. This cake has gained popularity beyond Iceland, often appearing in Scandinavian bakeries and cafes around the world.
Preheat the oven to 350°F (175°C).
Grease a rectangular baking dish.
In a large bowl, sift together flour, sugar, cocoa powder, baking powder, and salt.
In another bowl, whisk together eggs, milk, vegetable oil, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Pour the batter into the prepared baking dish and spread evenly.
Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Remove from the oven and let cool in the pan for 10 minutes.
Transfer the cake to a wire rack to cool completely.
In a small saucepan, melt butter over low heat.
Stir in heavy cream and powdered sugar until smooth to create a glaze.
Pour the glaze over the cooled cake, allowing it to drip down the sides.
Top with chocolate sprinkles before serving.
