Heat oil in a pot until it reaches 180 degrees Celsius (355 degrees Fahrenheit).
In a mixing bowl, combine 250 grams of ricotta cheese, 2 eggs, 28 grams of castor sugar, 15 milliliters of fresh orange juice, and the zest from one orange. Whisk until smooth.
Add 130 grams of double zero flour, a pinch of salt, and 8 grams of baking powder to the wet mixture. Combine until smooth.
Using a two tablespoon cookie scoop, drop batter into the hot oil, frying in batches of about six at a time for 3-4 minutes until golden brown.
Monitor the oil temperature to ensure it stays at 180 degrees Celsius (355 degrees Fahrenheit).
Remove zeppole from the oil and place them on a tray lined with paper towels to absorb excess oil.
Dust zeppole liberally with powdered sugar before serving.
