Measure out 120 grams (1 cup) of all-purpose flour.
Cut 1/2 cup of unsalted butter into tablespoon-sized pieces.
Add 1/2 cup of water and 1/2 cup of whole milk ricotta to a small saucepan.
Add 1 tablespoon of sugar to the saucepan.
Heat the saucepan over medium heat until the butter melts and the mixture comes to a boil.
Once boiling, add the flour and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
Remove the saucepan from heat and let the dough cool for about a minute.
Transfer the dough to a stand mixer with a paddle attachment or a large bowl if using a hand mixer.
Mix the dough on low speed for about a minute to cool it down.
Add eggs one at a time, mixing until the dough becomes silky and smooth after each addition.
Scrape down the bowl as needed to ensure all the dough is mixed well.
Once all eggs are added, mix for an additional two minutes until the dough is smooth and manageable.
Prepare a Dutch oven with about two inches of oil and heat it to 350°F (175°C) using a candy thermometer.
Using a spoon, scoop about a tablespoon of dough and drop it into the hot oil to fry.
After about a minute, flip the zeppole to ensure they brown evenly on both sides.
Alternatively, pipe the dough using a closed star tip onto parchment paper before dropping it into the oil.
Once fried, dust the zeppole with powdered sugar before serving.
