Kafteji is a traditional Tunisian dish that showcases the vibrant flavors of North African cuisine. Originating from the streets of Tunisia, it is often enjoyed as a hearty breakfast or light meal, combining various vegetables and eggs. Today, Kafteji is celebrated for its versatility and is commonly found in homes and restaurants across Tunisia and beyond, often adapted with local ingredients.
Cut 1 kg of peppers, 1 quart of pumpkin, and 2 medium potatoes into small pieces.
Cut 2 tomatoes into quarters and add them to the mix.
Add 1 head of garlic to the sheet pan with the vegetables.
Drizzle olive oil over the vegetables and bake in the oven at 180° C for about 20 minutes or until nicely grilled.
Fry 3 eggs in a pan.
In a bowl, combine the grilled vegetables with the fried eggs and chop them using two knives or an electric appliance.
Add 4 minced garlic cloves, 1 tbsp of homemade harissa, 1 tbsp of coriander, 1 tbsp of caraway, 1 tsp of salt, and some olive oil to the mixture and mix well.
Garnish the plate with 1 fried egg, some oven-baked potatoes, sliced onion, a sprinkle of cumin, 4 black olives, pickled peppers, and chopped parsley.
