Stir in chopped tomatoes and caraway seeds or coriander powder, and cook for another 3-4 minutes.
Return the fried potatoes to the skillet and mix well with the vegetables.
Crack eggs over the mixture and gently stir to combine, cooking until eggs are set, about 3-5 minutes.
Garnish with chopped fresh parsley before serving.
