milk

🥗Healthier: almond milk

💰Cheaper: water

Almond milk reduces calories while maintaining creaminess.

🥗Healthier: honey

💰Cheaper: agave syrup

Agave syrup is often cheaper and provides a different sweetness.

1

Start by making simple syrup: combine 1 cup of granulated sugar and 1 cup of water in a pot and heat until the sugar dissolves completely and the water turns slightly yellow. Set aside to cool to room temperature.

2

In a bowl, combine 1 cup of white long grain rice and 1 cinnamon stick. Add enough cold water to cover and let it soak overnight to hydrate the rice and infuse the cinnamon flavor.

3

After soaking, add the rice and cinnamon stick to a blender along with 2 cups of regular water. Blend for 2 to 3 minutes until well combined.

4

Using a sifter, strain the blended mixture to remove excess rice and cinnamon particles, using a spoon to help push it through if necessary.

5

In a separate bowl, add 1 can of evaporated milk and 1 can of condensed milk to the strained mixture. Mix well until fully combined.

6

Add vanilla extract or vanilla paste to the mixture for flavor. Mix thoroughly.

7

Taste the mixture and adjust sweetness with simple syrup, adding about half a cup, or to taste. Mix well again.

8

Transfer the horchata to a pitcher and serve over ice, garnishing with a cinnamon stick.
