Clean the turkey inside and outside.
Prepare garlic butter by mixing 17 cloves of fresh garlic with 1/2 cup of room temperature butter and a little salt to match the garlic.
Squeeze the juice of 1 lemon into a bowl and add adobo seasoning, black pepper, and paprika to taste.
Blend together a handful of cilantro, 1 medium onion, and the juice of 1 lime with 1/2 cup of extra virgin olive oil until smooth.
Rub the garlic butter all over the turkey, ensuring to cover every part including under the skin.
Season the turkey with adobo, black pepper, and paprika, making sure to cover everything.
Marinate the turkey overnight in the refrigerator.
The next day, remove the turkey from the refrigerator and let it sit outside for an hour.
Preheat the oven to 400°F (204°C).
Prepare a second baking pan with aluminum foil and place a rack inside.
Place the turkey breast side up on the rack in the second baking pan, pouring any remaining marinade over it.
Cover the turkey with aluminum foil.
Bake the turkey at 400°F for the first hour, then lower the temperature to 275°F (135°C) for 2 more hours, and finally increase to 325°F (163°C) for the remaining time.
Baste the turkey with its juices every 2 hours to keep it moist.
After cooking, remove the aluminum foil and increase the oven temperature to 350°F (177°C) to brown the skin.
Check the internal temperature of the turkey to ensure it is fully cooked.
