Prepare the syrup by placing water, stevia, rosewater, and cinnamon sticks in a deep pot and bringing it to a boil.
Let the syrup simmer for 8 minutes, then remove from heat and let it cool down. Add lemon juice when the syrup is cold.
Beat the eggs with melted butter, stevia, and baking soda.
Add lemon juice and vanilla extract, and beat for 3 more minutes.
Combine coconut flour, ground almonds, and coconut flakes, and add this mixture spoon by spoon to the egg mixture, mixing at high speed.
Grease a 30 cm baking sheet or cake mold with butter and pour in the cake batter.
Bake at 180ºC for 25 minutes.
Once the cake is baked, pour the syrup all over the cake, starting at the corners and slowly adding to the middle.
Stub the cake in several places with a sharp knife to help it absorb the syrup.
Let the cake cool down and then place it in the refrigerator before serving.
