Combine kosher salt, black pepper, chinese five spice, and szechuan peppercorns in a small bowl to cure the duck legs.
Completely coat both sides of the duck legs with the cure and place them in a deep container, covering with any remaining cure; refrigerate for at least 12 hours up to 48 hours.
Rinse the cured duck legs under cold water to remove the majority of the cure, then pat dry with paper towels.
Preheat the oven to 250 degrees Fahrenheit.
Melt a combination of duck and chicken fat over low heat, then place the duck legs skin side up in a deep baking dish and cover with the melted fat.
Wrap the dish tightly with aluminum foil and place in the oven for about three hours.
Prepare furikake rice seasoning by combining toasted sesame seeds, toasted black sesame seeds, bonito flakes, and crumbled toasted nori in a small bowl; add dried chili shrimps, kosher salt, and a pinch of sugar.
After three hours, check the duck legs; they should be tender and the bone exposed.
Remove the duck from the fat and allow it to cool slightly; shred the meat and discard the skin and bones.
Thinly slice green onions, mince ginger and garlic, and roughly chop the duck meat.
Heat a large cast iron skillet over medium-high heat.
Add the minced garlic and ginger to the skillet and sauté until fragrant.
Add the day-old jasmine rice to the skillet, breaking up any clumps, and stir-fry until heated through.
Add the shredded duck meat and stir-fry for a few more minutes.
Sprinkle the furikake seasoning over the rice and mix well to combine.
Taste and adjust seasoning if necessary, then serve hot.
