2 minced garlic cloves
3 tablespoons tomato paste
1 cup guava paste

Mix together 2 tablespoons brown sugar, 1 teaspoon chili powder, 2 teaspoons smoked paprika, 2 teaspoons garlic powder, 2 teaspoons onion powder, 1/2 teaspoon cinnamon powder, 1 teaspoon crushed red pepper, 1 teaspoon ground pepper, and 1 teaspoon regular salt to create a rub.

Coat the ribs with mustard and then apply the rub evenly over the ribs.

Prepare a mop sauce by combining 2 cups cider vinegar, 2 tablespoons brown sugar, 1/2 tablespoon cayenne pepper, a few dashes of hot pepper sauce, 1 tablespoon kosher salt, 1/4 tablespoon freshly ground pepper, and 1 quart apple cider. Cook on low heat until sugars dissolve, then cool and refrigerate.

Prepare the guava sauce by combining 1/2 cup water, 1/3 cup apple cider vinegar, 1/4 cup rum, 3 tablespoons lemon juice, 1 tablespoon soy sauce, 2 teaspoons worcestershire sauce, 2 tablespoons minced white onion, 2 minced garlic cloves, 3 tablespoons tomato paste, and 1 cup guava paste in a pot. Bring to boil, then reduce heat and simmer until thickened. Season with salt and pepper to taste and let cool.

Remove ribs from the fridge and let them rest at room temperature for 30 minutes.

Preheat the grill to 220°F using cherry wood for smoking.

Place the ribs on the grill with the bone side towards the heat source and cook for 6 hours, mopping every hour for the first 5 hours.

In the last hour, brush the guava sauce on the ribs every 10 minutes.
