Today, we are making Niedersächsische Hochzeitssuppe.
For the soup, we need homemade beef broth, beef shank, ground beef, cauliflower florets, spring onions, nutmeg, salt, pepper, and soaked bread for binding.
First, add the cauliflower florets to the pot because they take longer to cook.
Stir everything and let it cook.
Once the first vegetables are almost cooked, add the ground beef to the pot and stir.
Prepare the meatballs while the soup is cooking.
Take the soaked bread and squeeze it out well.
Season the mixture with salt and pepper, and add nutmeg.
Mix everything together thoroughly.
Form small meatballs from the mixture and add them to the soup.
Let the soup simmer with the meatballs added.
Once the meatballs are floating, add the spring onions and stir gently.
Cut the egg custard into small pieces and add them to the soup.
Serve the soup hot, ensuring each bowl has a mix of meatballs, vegetables, and broth.
