Today, this dish has gained popularity beyond Uganda, with variations found in many cultures around the world, each adding their unique twist to the preparation and seasoning.

Prepare the smoker according to the manufacturer's instructions.
Season the whole chicken with smoked paprika, cumin, coriander, salt, and black pepper.
Place the seasoned chicken in the smoker and smoke for 1.5 to 2 hours at 225°F until fully cooked.
Remove the chicken from the smoker and let it rest for 10 minutes before carving.
In a large pot, heat olive oil over medium heat and sauté chopped onion and garlic until translucent.
Add rice to the pot and stir for 2-3 minutes until slightly toasted.
Pour in chicken broth and add bay leaves, bringing to a boil.
Reduce heat, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed.
Fluff the rice with a fork and stir in chopped carrots and green peas.
Serve the smoked chicken over the rice, garnished with lemon wedges and parsley.
