Warm olive oil in a small pan and add smashed garlic cloves and a bay leaf.
Let the garlic infuse in the oil over low heat for 5-10 minutes, then strain out the solids.
Wrap a head of garlic in foil, drizzle with olive oil and sprinkle with sea salt, then roast until soft.
Squeeze the roasted garlic from the skins and mash into a smooth paste.
Char half of the tomatoes and both peppers over a gas flame or under a broiler until blistered, then peel and dice.
Dice the remaining raw tomatoes, cucumber (seeds removed), and red onion (rinsed under cold water).
Combine the raw and charred vegetables in a large bowl with fresh coriander.
In a jug, mix chilled water with garlic-infused olive oil, roasted garlic paste, apple cider vinegar, and a dash of white soy sauce. Adjust seasoning with salt and oil as needed.
Tear rustic bread into pieces and spoon the vegetable mix over it, then pour the chilled broth over the top.
