Gradually pour in 2 cups of milk or cream while whisking to eliminate lumps.
Add some of the crab cooking water for flavor and continue whisking until the mixture is thick and creamy.
Stir in shredded cheese (like brie or sharp cheddar) until melted and creamy.
Crack open the warmed crab legs to extract the meat, showing the process.
Add the crab meat to the creamy sauce and mix well.
Pour the mixture into a baking dish or serve in portions as desired.
