1

Preheat the oven to 360°F.

2

In a skillet over medium heat, add some oil.

3

Once the oil heats up, add minced garlic and one large finely chopped onion. Mix well.

4

Add salt and sauté for about 1 minute.

5

Add 1 teaspoon of green chili paste (or green chilies) and sauté further.

6

Add one large finely chopped tomato (or cherry tomatoes) to the skillet.

7

Add bell peppers and mushrooms (you can use three colors, two colors, or one color). Semi-cook the vegetables, being careful not to overcook them as they will be baked again.

8

In another skillet, add olive oil and fry sliced sausages on medium heat until slightly golden. Drain the oil and set aside.

9

Add red chili flakes and black pepper powder to the sausage mixture and mix well.

10

Turn off the heat and add the sausages to the vegetable mixture, mixing to combine.

11

Add oregano for flavor and mix well.

12

Add 2 to 3 tablespoons of mayonnaise and 1 tablespoon of ketchup to the mixture and mix thoroughly.

13

Let the filling cool completely at room temperature for 30 minutes or in the fridge for 1 hour.

14

Spray a muffin tin with non-stick spray and set aside.

15

Cut the puff pastry into squares and place each piece into the muffin tin cavities to form cups.

16

Add the sausage and pepper filling into each pastry cup.

17

Top with shredded cheddar and mozzarella cheese as desired.

18

Add a slice of cherry tomato and cilantro on top of each cup.

19

Bake in the preheated oven for 25 to 30 minutes until the pastry is puffed and golden on the edges.

20

Leave the pastry cups in the muffin tray for about 5 minutes before serving.
