2 lbs red potatoes
1 cup onions
1 cup bell peppers
2 tablespoons coffee rub
1/2 cup milk
4 tablespoons butter

Prepare a 10-inch deep Lodge Dutch oven by oiling it to prevent sticking.

Line the bottom of the Dutch oven with red potatoes.

Sprinkle coffee rub over the potatoes.

Add a layer of onions and bell peppers on top of the potatoes.

Add another layer of red potatoes on top of the onions and bell peppers.

Sprinkle more coffee rub and add more onions and bell peppers on the second layer.

If desired, add salt to the potatoes.

Pour in 1.5 cups of milk over the layers.

Cut a stick of butter into pieces and place it on top of the mixture.

Cover the Dutch oven with its lid and place it on the fire.

Add 22 coals on top of the Dutch oven for cooking.

After 15 minutes, turn the Dutch oven a quarter turn to ensure even cooking.

After another 15 minutes, turn the Dutch oven a quarter turn again and add more coals if needed.

After 45 minutes of cooking, check the potatoes for doneness by stirring and ensuring they are soft and not dry.
