Crispy Cowboy Potatoes are a beloved American comfort food, often served at barbecues and gatherings. This dish combines the heartiness of potatoes with the indulgence of cheese and bacon, making it a crowd-pleaser. Variations abound, with some adding jalapeños for a spicy kick or different cheeses for unique flavors.
Heat a frying pan on high until hot.
Add 2 cups of water to the pan.
Add 1 stick of butter to the water.
Season the water with a little salt and pepper.
Add chopped green, yellow, orange, and red peppers along with onions to the pan.
Wait for the butter to melt and the mixture to start bubbling.
Once bubbling, reduce heat to medium and add the potatoes without stirring them.
Occasionally push the potatoes around to prevent sticking but do not stir to avoid mashing them.
Cover the pan with a lid to cook the potatoes and steam them until the water evaporates and they soften.
After cooking down, check the potatoes and add house seasoning and a little cayenne pepper, mixing gently.
Add about 1/4 cup of vegetable oil to the pan.
Add the peppers and onions to the potatoes and turn the heat back up high.
Mix the potatoes with the vegetables using a spatula to ensure they get crispy.
Fry for about 3-4 minutes, then gently push the potatoes around again.
Continue frying and turning the potatoes until they reach your desired level of crispiness.
Cover with a lid while frying to help them crisp up better.
