Cowboy potatoes

Preheat the oven to 400°F.

Place 1 stick of butter in a casserole dish and put it in the oven to melt.

Peel 5 medium potatoes, wash them, and cut them in half lengthwise.

Remove the melted butter from the oven and set the casserole dish on the cutting board.

In a bowl, crack 1 egg and add 1 cup of milk, then whisk together.

Add 1 cup of flour, 1/2 cup of grated Parmesan, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper to the egg and milk mixture, then whisk until combined.

Dip the potato halves in the egg and milk mixture, letting them sit for a minute.

Using one wet hand and one dry hand, coat the potatoes in the flour mixture.

Sprinkle additional Parmesan on top of the coated potatoes before placing them in the oven.

Bake the potatoes at 400°F for 30 minutes on one side.

After 30 minutes, carefully flip the potatoes over and return them to the oven.

Finish cooking the potatoes on the other side until browned.
