Sift 550 g of flour into a bowl.
Add 1/2 cup sugar, a pinch of salt, and 1 tablespoon of yeast to the flour and mix.
Add 5 tablespoons of room temperature butter, 2 room temperature eggs, and 1 tablespoon of vanilla to the dry ingredients and mix until crumbly.
Warm 1 cup of milk to 110°F in the microwave and pour it into the mixture, mixing for about 1-2 minutes.
Switch to a dough hook and mix until a dough forms, about 10 minutes, until it has an elastic texture.
Butter a mixing bowl generously and place the dough inside, buttering the top of the dough to prevent drying.
Cover the bowl loosely with parchment paper or plastic wrap and a towel, then place it in a warm area to rise for about an hour until doubled in size.
After rising, punch down the dough to release air and shape it into a rectangle.
Spread 1 stick of room temperature butter evenly over the dough.
Mix 1 1/2 cups of brown sugar and 3 tablespoons of cinnamon together, then sprinkle it over the buttered dough and press it in.
Roll the dough tightly, tucking as you go, and seal the edge by pulling and flapping it over.
Cut off the uneven edges, then slice the rolled dough into about 8 pieces.
Butter the bottom of a baking pan and place the cinnamon rolls inside.
Cover the rolls with parchment paper and a towel, letting them rise in a warm spot for another hour.
Prepare the icing by whipping together 4 oz of cream cheese, 4 tablespoons of butter, 1 tablespoon of vanilla, 2 tablespoons of milk, and 1 1/2 cups of powdered sugar until creamy.
Preheat the oven to 350°F and bake the rolls for 18-20 minutes.
Let the rolls cool for about 5 minutes after baking, then pour the icing over them.
