1

Start by measuring 14.5 ounces of sorrel and adding 2 washed cinnamon sticks to it.

2

Boil 3 cups of water and add the sorrel petals and cinnamon sticks, then cover and allow to boil.

3

After boiling, turn off the stove and let it steam for 2-3 hours to concentrate the liquid and soften the petals.

4

Once cooled, blend the sorrel petals with 1 cup of the concentrated sorrel juice until smooth.

5

In a mixing bowl, cream together 200 grams of unsalted butter until soft, then add 2 cups of soft brown sugar and mix for 3-5 minutes.

6

Add 5 eggs to the mixture one at a time, whisking after each addition, and scrape down the sides of the bowl as needed.

7

Incorporate 1/2 tablespoon of lemon zest and 1 tablespoon of lemon juice into the egg mixture.

8

Add 1 tablespoon of vanilla extract, 1 tablespoon of rose water, and 2 teaspoons of almond essence to the mixture and combine well.

9

Stir in 3 cups of sorrel puree and 1 and 1/3 cups of blended fruits, folding gently to mix.

10

Add 2 tablespoons of red food coloring to achieve desired color, mixing well.

11

In a separate bowl, sift together 2 cups of all-purpose flour, 1 teaspoon of cinnamon powder, 1 teaspoon of ground nutmeg, 1/4 teaspoon of cloves, 1 and 1/2 teaspoons of salt, and 1 and 1/2 teaspoons of baking soda.

12

Gradually add the dry ingredients to the wet ingredients in thirds, folding gently to avoid overmixing.

13

Incorporate 1/3 cup of red wine into the batter, folding until combined.

14

Pour the batter into a greased and lined 9-inch loaf pan, filling it halfway and tapping to remove air bubbles.

15

Place the loaf pan in a preheated oven at 350°F with a water bath and bake for 1 hour and 30 minutes.

16

After baking, spray a mixture of wine and rum on top of the hot cake before cooling it down.
