Prepare the bitter melon by slicing it lengthwise, removing the seeds and white parts with a spoon, then slice it thinly (about 1/4 inch or less).
Mash the salted black beans into a paste after soaking and draining them.
Heat a wok until very hot and add 1/2 tablespoon of cooking oil.
Add minced ginger and garlic to the hot wok and sauté until fragrant.
Add the sliced bitter melon to the wok along with 3/4 cup of water, cover, and let it cook for about 3-4 minutes until softened.
Check the bitter melon for tenderness and cook for an additional couple of minutes if necessary.
Add the marinated chicken to the wok and stir-fry until cooked through.
Add the mashed black bean paste, sugar, oyster sauce, and the cornstarch mixed with water to the wok.
If desired, add a little dark soy sauce for color.
Crack an egg into the mixture and stir until combined and cooked through.
Plate the dish with steamed rice and serve.
