Separate one egg into a bowl and beat it until frothy.
Add a second egg white to the bowl and beat until frothy again.
In a separate bowl, combine 2 tablespoons of King Arthur Baking sugar and 2 tablespoons of cocoa powder.
Add 2 tablespoons of ChocZero maple syrup to the mixture and mix well.
Spray a baking pan with cooking spray that contains flour to prevent sticking.
Add the 16 ounces of unsalted peanuts to the bowl and coat them well with the chocolate mixture.
Preheat the oven to 350°F, then reduce to 300°F before placing the pan inside.
Bake the peanuts for 30 minutes, checking periodically to ensure they don't burn.
If using raw unsalted peanuts, increase baking time to 25-30 minutes; if using roasted peanuts, bake for 20 minutes.
Allow the peanuts to cool before tasting, as they may have a bitter taste when hot.
