Lafa

Cultural Context

Lafa, a traditional Middle Eastern flatbread, is often associated with street food culture in Israel, served with grilled meats and fresh salads. Its origins can be traced back to the Levant region, where it is enjoyed for its soft, chewy texture and versatility. In modern times, Lafa has gained popularity beyond its borders, often featured in various culinary adaptations worldwide, especially in Mediterranean and Middle Eastern cuisine.

1

Make the dough using 1 kilo of dough, 3 tablespoons of yeast, 1 tablespoon of sugar, 1 teaspoon of salt, and 30 milliliters of olive oil.

2

Add warm water to the mixture to create a soft dough and let it rise for about 40 minutes until doubled in size.

3

Cut the risen dough into 4 to 6 equal portions.

4

Roll each portion into a ball, using flour to prevent sticking.

5

Flatten each ball with your hands and roll it out into a thin circle using a rolling pin, turning it 45 degrees every few rolls.

6

Heat a frying pan upside down and add a little oil to prevent sticking.

7

Place the rolled dough onto the hot pan and cook until bubbles form, about 30 seconds to 1 minute, then flip to cook the other side.
