Afghani Bolani

Mix all purpose flour, instant yeast, salt, and oil in a bowl.
Gradually add water and knead to make a smooth dough.
Cover the dough and let it rest for a while.
Boil potatoes until tender, then mash them in a bowl.
Add chopped green chillies, spring onion, coriander leaves, and pepper to the mashed potatoes.
Mix until well combined and set aside.
Divide the rested dough into equal portions and roll each into a thin circle.
Place a spoonful of the filling in the center of each circle.
Fold the dough over the filling and seal the edges by pressing down.
Heat oil in a skillet over medium heat until shimmering.
Fry each bolani for 3-4 minutes on each side until golden brown.
Remove from the skillet and drain on paper towels.
For the sauce, blend yogurt, lemon juice, mint, salt, and chopped garlic.
