Chilorio and Refried Pinto Beans Bowl

2 to 4 pounds pork shoulder
1 bay leaf

1 ancho chili

1 teaspoon cumin seeds
1 teaspoon dried oregano
5 black peppercorns
1/4 cup white vinegar

Cut the pork shoulder into cubes and place it in a pot.

Add a bay leaf, some salt, and enough water to cover the meat.

Simmer this mixture for about 45 minutes to 1 hour until the pork is tender.

Remove the pork from the pot and shred it finely using two forks.

Soak 5 guillo chilies and 1 ancho chili in hot water until they become soft.

Blend the softened chilies with a few garlic cloves, 1 teaspoon of cumin seeds, 1 teaspoon of dried oregano, 5 black peppercorns, and 1/4 cup of white vinegar.

Add a bit of the pork cooking water to help blend everything smoothly.

In a large pan, heat about 2 tablespoons of lard.

Once the lard is hot, add the shredded pork and brown it slightly.

Pour in the chili sauce and stir everything together.

Let it cook for about 10 to 15 minutes to allow the flavors to meld and the sauce to thicken.
