450 gms chicken, boneless thigh pieces cubed
1 tbsp dark soy sauce
1 tbsp light (low sodium) soy sauce
3 tbsp rice vinegar
3 tbsp white sugar
2 tbsp hoisin sauce
1/4 cup water
1 tbsp corn starch
1/4 tsp salt
1/4 tsp pepper powder
2 tbsp General Tso’s Sauce, prepared earlier
4 tbsp egg white, whisked
1/2 US cup all purpose flour
3/4 US cup corn starch
1/4 tsp baking soda
1/4 tsp salt
1.5 tbsp oil
2 tbsp garlic cloves fine chopped
2 tbsp ginger, finely chopped
1-1.5 tsp red chilli flakes
1 tsp white sesame seeds

Cut the boneless thigh into 1 inch pieces.

Prepare General Tso’s Sauce by mixing dark soy sauce, light soy sauce, rice vinegar, white sugar, hoisin sauce, water, and corn starch until there are no lumps.

Marinate the chicken pieces with salt, pepper powder, and 2 tbsp of the prepared General Tso’s Sauce. Mix and set aside for 30 mins.

Add whisked egg white to the marinated chicken and mix well.

In another container, mix all purpose flour, corn starch, baking soda, and salt.

Coat the marinated chicken pieces in the dry batter mix in batches.

Heat oil in a pan for deep frying on medium heat and fry the chicken pieces until light golden in color, about 4-5 mins.

In a wok, heat oil and sauté garlic, ginger, and red chilli flakes for around 1 min.

Add the General Tso’s Sauce and cook for a minute or two until it thickens.

Add the fried chicken pieces and mix until coated in the sauce, cooking for around 2 mins.

Garnish with white sesame seeds and serve hot.
