Take a large bowl and add 2 pounds (900 grams) of ground beef.
Break 2 eggs into the bowl.
Season with 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of paprika.
Grate 1 onion and add it to the bowl.
Finely chop a bunch of parsley and add it to the mixture.
Mix everything together using your hands until well combined.
Place 5 medium potatoes in a saucepan and fill it with water.
Add 1 teaspoon of salt and cover with a lid.
Cook the potatoes over medium heat for about 30-40 minutes.
Lay out a sheet of parchment paper on your work surface.
Press the ground beef mixture into a square shape on the parchment paper.
Melt about 30 grams (1/4 stick) of butter in a frying pan.
Grate 2 cloves of garlic and add them to the pan, frying until fragrant.
Chop 150 grams (5 ounces) of spinach and add it to the pan, sautéing until wilted.
Spread the cooked spinach evenly over the ground beef.
Drizzle olive oil into the pan and finely chop 200 grams (7 ounces) of mushrooms.
Sauté the mushrooms in the oil until golden and cooked through, then layer them over the spinach on the meat.
Grate 150 grams (5 ounces) of Emmental cheese and sprinkle it over the spinach and mushrooms.
Carefully form the meat into a roll using the parchment paper to guide it.
In a small bowl, combine 2 tablespoons of ketchup, 4 tablespoons of soy sauce, 1 teaspoon of grain Dijon mustard, and 2 tablespoons of honey to create a marinade.
Brush the meat roll generously with the marinade and wrap it in foil.
Preheat the oven to 360 degrees Fahrenheit (180 degrees Celsius).
Place the wrapped meat roll in the oven and let it bake for 1 hour.
Check the potatoes; they should be tender. Drain the water and return them to the saucepan.
Add 60 milliliters (2 fluid ounces) of cream and 30 grams (1 ounce) of grated Parmesan cheese to the potatoes.
Mash everything together until smooth and creamy.
Ten minutes before the roll is done, take it out of the oven, open the foil, and brush it with the remaining marinade.
Put it back in the oven uncovered for another 10 minutes to caramelize the top.
Take the meat roll out of the oven and slice it into thick pieces.
Place a generous scoop of mashed potatoes on a plate, add a slice of the meat roll, and some cherry tomatoes.
Garnish the potatoes with fresh herbs.
