Instructions
- 1Prepare a baking dish by lining it with parchment paper.
- 2Rinse quinoa under cold water and cook according to package instructions until fluffy.
- 3In a large mixing bowl, combine cooked quinoa, peanut butter, honey, and vanilla extract.
- 4Mix until all ingredients are well combined and sticky.
- 5Fold in coconut flakes, chocolate chips, pumpkin seeds, sunflower seeds, dried cranberries, and almonds.
- 6Add a pinch of salt and cinnamon to the mixture and stir well.
- 7Transfer the mixture to the prepared baking dish and press down firmly to create an even layer.
- 8Refrigerate for at least 1 hour to set.
- 9Once set, lift the bars out of the dish using the parchment paper.
- 10Cut into squares or rectangles as desired.
- 11Store in an airtight container in the refrigerator.
