Process almonds in a food processor until finely chopped, leaving some small chunks.
Add goji berries, currants (or sultanas or raisins), coconut, vanilla extract, maple syrup, and a pinch of salt to the food processor with the almonds.
Mix until the ingredients stick together and form a cohesive mixture.
Weigh out 35 grams of the mixture for each ball and roll them into balls, squashing them a couple of times to form a tight shape.
Place the rolled balls on a tray.
Dip half of each ball in melted chocolate and place them back on the tray.
Refrigerate the balls for about an hour to set the chocolate.
After the chocolate has set, double dip the balls in chocolate for extra coverage and place them back in the fridge.
