  • 2 cups salt fish (dried and salted)
  • 4 ripe plantains

Instructions

  1. 1Soak the salt fish in water for at least 2 hours to remove excess salt. Change the water a couple of times.
  2. 2After soaking, drain the fish and rinse it under cold water. Place it in a pot with fresh water and boil for about 15 minutes until tender.
  3. 3Remove the fish from the pot, let it cool, and then flake it into bite-sized pieces, removing any bones.
  4. 4In a skillet, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and bell pepper, and sauté until softened.
  5. 5Add the flaked salt fish to the skillet along with black pepper and thyme. Stir well to combine and cook for about 5 minutes.
