Pinto Beans - Southern Style in Pressure Cooker

Chicken wings are lower in fat, while pork hocks are often cheaper.

Wash the dried pinto beans thoroughly.

Place the beans inside the pressure cooker or Instant Pot.

Cover the beans with water, ensuring there is about an inch and a half of water above them.

Add 8 oz of country ham chips for smoky flavor.

Add 1/2 tablespoon of salt and 1/2 tablespoon of black pepper.

Add 1 chopped onion to the pot.

Seal the lid of the pressure cooker.

Cook on high pressure for about 65 minutes.

Once cooking time is up, let the pressure release naturally.

Check the beans; they should be perfectly cooked and tender.

If the broth is not thick enough, scoop out a spoonful or two of beans, mash them with a fork, and stir back into the pot.
