Wash snails with alum to clean them.
Boil snails in a pot with water, adding seasoning, salt, garlic, ginger, onions, and bay leaves.
Add enough clean water to the pot to boil the snails.
Boil the snails for about 25 to 30 minutes until tender.
Prepare the pepper mixture by grilling green bell pepper, rodo, tachi, and onions in the oven or air fryer until they reach a good consistency.
Check the snails to ensure they are cooked and tender, then remove them from the pot.
Heat vegetable oil in a pan and add onions for flavor.
Fry the boiled snails in the oil until they are crunchy and golden brown.
In the same pot, add the fried snail oil, then add onions, garlic, and ginger to make the pepper sauce.
Blend the grilled pepper mixture and add it to the pot, stirring to fry and evaporate excess water.
Add seasoning and salt to the sauce, stirring until well combined and cooked down.
Add the fried snails to the sauce, mixing well to coat them.
Add a bit of water to help the snails absorb the sauce, then cook together for less than 2 minutes.
