1

In a bowl, add 1 cup of mayonnaise, 1.5 teaspoons of minced garlic, 2 tablespoons of relish, the juice of half a lemon, 3 tablespoons of dijon mustard, 1 teaspoon of worcestershire sauce, 1 teaspoon of hot sauce, 0.5 teaspoon of creole seasoning, 0.25 teaspoon of pepper, and 0.25 teaspoon of salt. Mix everything together until well combined and set the sauce aside.

2

Thoroughly clean 2 king crab legs, rinsing off any dirt or barnacles.

3

Break open the king crab legs and take out the meat by cutting along the side of the shell and opening it up. Remove all the meat from the crab legs and discard the white fat and green bits.

4

Season the king crab meat with pepper, garlic powder, onion powder, old bay, and paprika. Set the seasoned king crab aside.

5

In a bowl, add 1 cup of buttermilk, 1 egg, and some hot sauce. Mix together until well combined and set aside.

6

In another dish, add flour and seasonings: pepper, onion powder, garlic powder, old bay, paprika, and creole seasoning. Mix everything together until well combined.

7

Coat the king crab first in the flour mixture, then in the buttermilk mixture, and finally back into the flour mixture. Repeat this process with the rest of the king crab.

8

Fry the coated king crab in a pot or deep fryer at 350 degrees for 4 to 5 minutes or until crispy and golden brown. Place the fried crab on a wire rack or a paper towel-covered plate to drain excess oil.

9

Cut a tomato into slices and cut a piece of french bread in half. Add butter to the bread and place it in the oven at 400 degrees to toast to your liking. Optionally, take out the bread when the butter is almost melted, spread it, and place it back in the oven to toast more.

10

Assemble the po boy by adding lettuce, then tomatoes (seasoned with salt and pepper), followed by the king crab, and finally the sauce.
