Sauté until the onion is translucent, about 3-4 minutes.
Add tomatillos, jalapeños, and green bell pepper; cook for 5 minutes until softened.
Return the pork to the pot and add chicken broth, cumin, oregano, and bay leaves.
Bring to a simmer, then cover and reduce heat to low.
Cook for 1.5 to 2 hours until the pork is tender and easily shredded.
Stir in chopped cilantro and lime juice before serving.
Taste and adjust seasoning with salt and pepper as needed.
