Slow Cooker Ham and Potato Soup

Chop up all veggies and potatoes; soak chopped potatoes in water overnight to prevent browning.

Add 2 to 3 cups of precooked ham, cut into bite-sized chunks, to the slow cooker.

Add peeled and chopped potatoes, diced ham, carrot, and onion to the slow cooker.

Season with salt, black pepper, thyme, and fresh parsley.

Pour in 5 cups of low-sodium chicken broth.

Cover and cook on high for 3 hours or low for 7 hours.

Remove herbs and mash a few cups of carrot and potato to thicken the soup.

Add the mashed mixture back to the slow cooker and cook for another 10 minutes.

Serve with sour cream and milk for richness.
