Pour water into a pan and bring to a boil.
Add rice and cook for about 5 minutes until almost all water is absorbed.
Add salt and butter to the rice, mix, then add milk.
Bring the milk to a boil, then reduce to a simmer and cook for about 30 minutes until rice is soft.
Dissolve salt in water, add melted butter and spelt flour, mix until smooth, then add rye flour.
Mix to form a dough, then divide into eight equal pieces and shape into balls.
Flatten each dough ball and fold the edges over the middle, then smooth it out.
Preheat the oven to 230°C (445°F) with fan or 250°C (480°F) without fan.
Roll out each dough ball into a thin oval shape, about 1-2 mm thick.
Spread 1/8 of the rice filling on each piece of dough, leaving a small edge.
Pinch the edges of the dough together to seal the filling inside.
Arrange the pies on a nonstick paper-lined baking tray and bake for around 15 minutes until golden brown.
Brush the baked pies with oil or butter if desired.
Let the pies cool on a rack.
