Pullman bread, also known as Pain de Mie, originated in France and is characterized by its soft texture and square shape, making it ideal for sandwiches. Traditionally baked in a covered pan, it symbolizes the French mastery of bread-making. Today, this versatile loaf is enjoyed worldwide, often adapted with various grains or flavors to suit different palates.

Mix bread flour, sugar, and salt in a large bowl.
Dissolve yeast in warm water and let sit until frothy, about 5-10 minutes.
Add the yeast mixture, milk, and melted butter to the flour mixture.
Stir until a dough forms, then knead on a floured surface for about 10 minutes until smooth.
Place the dough in a greased bowl, cover, and let rise until doubled, about 1-2 hours.
Punch down the dough and shape it into a rectangle.
Place the shaped dough into a greased Pullman loaf pan.
Cover and let rise again until it reaches the top of the pan, about 30-45 minutes.
Preheat the oven to 375°F (190°C).
Bake for 30-35 minutes until golden brown and sounds hollow when tapped.
Remove from the oven and let cool in the pan for 10 minutes.
Turn out onto a wire rack to cool completely before slicing.
