Start with 1.5 cups of white kidney beans and some of their liquid, enough to cover the beans, reserving any leftover liquid for thinning the dressing if needed.

Prepare 4 to 5 cloves of garlic, adjusting quantity based on preference for garlic flavor.

Add garlic, 1 tablespoon of red wine vinegar (or extra lemon juice), 1 tablespoon of green olives with a bit of brine (optional), 1 tablespoon of capers with some caper brine, 1 teaspoon of dijon mustard, juice from half a lemon, and salt and pepper to taste into a blender.

Blend on high speed for about 1 minute or until smooth and creamy.
