Today, it is enjoyed globally, often adapted with variations like vegan or healthier versions.

Nutritional yeast is lower in calories and adds a cheesy flavor.

Capers provide a similar briny flavor without the fish.
Soak 1/2 cup cashews in water for a couple of hours.
Drain the soaked cashews.
Add the following ingredients into a Vitamix: 1/2 cup soaked cashews, 1/4 cup water, 2 tablespoons extra virgin olive oil, 1 tablespoon lemon juice, 1/2 tablespoon dijon mustard, 1/2 teaspoon garlic powder, 1 small garlic clove (unpeeled), 1/2 tablespoon worcestershire sauce, 2 teaspoons capers, pepper, and sea salt.
Blend all ingredients until smooth.
Dress the salad greens with the dressing, using as much as desired without over-saturating the leaves.
Top the salad with fresh ground pepper and grated parmesan cheese.
Store any leftover dressing in a glass container in the refrigerator for up to a week.
